• 1/2 cup unsalted butter
  • 2 cups all-purpose flour
  • 1/2 cup dried fruit to taste
  • 1 Orange (finely grated zest)
  • 1/4 cup light brown sugar
  • 1 large egg (beaten)
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon milk
  • caster sugar


Step 1/5:

Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.


Step 2/5:

Put the butter and flour into a mixing bowl and rub together with your fingertips until the mixture resembles breadcrumbs.


Step 3/5:

Stir in the cranberries, orange zest, sugar and egg with the baking powder, cinnamon, and milk. Mix together well to make a softish dough.


Step 4/5:

Divide the dough into 8 and shape each piece into a rough mound.


Step 5/5:

Put onto the baking tray and bake for 15-20 minutes until pale golden. Sprinkle lightly with caster sugar while the cakes are hot. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
